De hecho, la parte blanca es muy amarga y podr\u00eda arruinar el sabor de la crema.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">En un bol mezclar las yemas con el az\u00facar hasta su total absorci\u00f3n.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Vierte la leche (menos un cuarto de taza, reserva) en una cacerola. Calienta a fuego medio con la ralladura de lim\u00f3n y la ramita de canela para darle sabor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mientras la leche se calienta, diluye la maicena en la leche reservada. Cuando est\u00e9 bien diluido lo a\u00f1adimos al cazo. Mezclar poco a poco con una cuchara de madera hasta que la leche empiece a hervir. Retira la sart\u00e9n del fuego y deja reposar durante 3-4 minutos. Extraer la ramita de canela y la ralladura de lim\u00f3n, filtrando todo por un colador.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Agrega la leche a la mezcla de yemas de huevo. Contin\u00faa mezclando bien hasta que todos los ingredientes est\u00e9n completamente integrados. Regresa la sart\u00e9n al fuego, pero esta vez a fuego medio-bajo. Mezcla continuamente con una cuchara de madera hasta obtener una mezcla cremosa y densa. Su punto d\u00e9bil es que al pasar la cuchara de madera se forman surcos en la nata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">En este punto, retiramos la cr\u00e8me br\u00fbl\u00e9e del fuego y la distribuimos en recipientes individuales, no muy hondos. Deje enfriar a temperatura ambiente, luego refrigere durante 3 a 4 horas.
