Pesto Mediterráneo de Tomates Secos: Sabor Intenso y Versátil 🍅🌿🌰✨
This recipe is easy to make and will allow you to have a jar of this delicious pesto ready in minutes.
Ingredientes:
- 1 cup (about 150g) of sun-dried tomatoes in oil, drained (reserve 1-2 tablespoons of the oil).
- ½ cup (about 60g) of walnuts or pine nuts (you can lightly toast them in a dry pan to enhance their flavor).
- 2-3 cloves of garlic, peeled.
- ½ cup (about 50g) of Parmesan cheese (or Grana Padano) grated.
- ¼ cup (60ml) of extra virgin olive oil (in addition to the reserved oil from the tomatoes).
- 2 tablespoons of fresh basil (optional, for an aromatic touch, although the pesto is delicious without it).
- 1 tablespoon of balsamic vinegar (optional, for a touch of acidity that balances).
- Salt and freshly ground black pepper to taste.
Utensilios:
- Food processor.
- Spatula.
- Sterilized glass jar for storage.
Instrucciones:
Paso 1: Prepare los ingredientes base
- If the sun-dried tomatoes are very hard (not in oil), you can hydrate them by soaking them in hot water for 10-15 minutes and then draining them well. If they come in oil, simply drain them and reserve 1-2 tablespoons of the oil to use in the recipe.
- If you are going to toast the walnuts or pine nuts, heat a small pan over medium heat and toast them for 3-5 minutes, stirring constantly, until lightly golden and fragrant. Be careful not to burn them. Let cool.
Paso 2: Procesar el pesto
- In the food processor bowl, add the drained sun-dried tomatoes, toasted walnuts/pine nuts (if using), garlic cloves, grated Parmesan cheese, and fresh basil (if using).
- Pulse several times until the ingredients are chopped and mixed, but not yet a completely smooth paste. We want a slightly rustic texture.
- With the processor running (or pulsing intermittently), gradually pour in the extra virgin olive oil and the reserved oil from the tomatoes (if using), until you reach the desired consistency. The pesto should be thick but spreadable.
- If using, add the balsamic vinegar and pulse once or twice more to incorporate.
Paso 3: Sazonar y ajustar
- Stop the processor and taste the pesto.
- Season with salt and black pepper to taste. It will likely need less salt due to the sun-dried tomatoes and Parmesan cheese.
- Pulse one last time to integrate the seasonings.
Paso 4: Store and Enjoy
- Transfer the Mediterranean sun-dried tomato pesto to a sterilized glass jar.
- To prolong its freshness, pour a thin layer of extra virgin olive oil over the pesto before closing the jar. This creates a seal that helps prevent oxidation.
- Store in the refrigerator for up to 1-2 weeks.
